Blinis with yellow dragon fruit

  • 1 egg
  • 100 g buckwheat flour
  • 1 tsp baking powder
  • 150 ml full milk
  • 3-4 tbsp vegetable oil
  • 5 g chives
  • 150 g cream cheese
  • ¼ head lollo verde
  • 50 g thin sliced coppa di parma ham

Preparation method

  1. Make the batter for the blinis. Separate the egg. Beat the egg white in a clean bowl with a mixer until stiff. Beat the egg yolk with the flour, baking powder, milk and a pinch of salt to create a smooth batter. Fold the egg white through this mixture as lightly as possible.
  2. Heat some oil in a non-stick frying pan. Spoon 1 tablespoon of batter into the pan and repeat until there are 3-5 separate blinis in the pan. Bake the blinis on a medium heat for approx. 2 minutes. Flip the blinis once the top starts to solidify. Repeat the steps above until all the batter is used up. Bake approx. 24 blinis in this way. Leave the blinis to cool completely.
  3. Finely slice the chives and mix with the cream cheese. Transfer to a piping bag. Pipe a rosette of cream cheese onto each blini. Arrange some salad leaves and the slices of ham over the blinis.
  4. Slice the dragon fruit in half and scoop the flesh out of the skin. Slice the flesh into 2 cm chunks. Divide the dragon fruit over the blinis. Insert a cocktail pricker to secure the ingredients.
