Filled tomatoes with managetout

This dish is fun and easy to make with the kids. Serve these filled tomatoes as a healthy snack or small starter. They also make a lovely vegetable side dish served with fish or meat.

Preparation method

  1. Cook the mangetout and broccoli for approx. 3 minutes until just tender. Drain and rinse under cold running water to stop the cooking process.
  2. Prepare the corn on the cob in the microwave according to the instructions on the package. Remove the kernels from the cob.
  3. Slice way the tops of the tomatoes. Carefully remove the seeds with a teaspoon. Arrange six to seven mangetout in each tomato, add some corn kernels and a small broccoli floret.

 

  1. Tip: Serve with a dip sauce made of 3 tablespoons of yoghurt, 1 tablespoon of mayonnaise and ½ a teaspoon of mustard. The recipe then is no longer lactose free.
