Spicy pizza with sweet potato

Spicy pizza

  • EAT ME sweet potato Product photo
    200 g sweet potatoes
  • ½ courgette
  • ½ red sweet pepper
  • 1 mozzarella (200g)
  • EAT ME Cayenne Pepper Product photo
    1 cayenne pepper
  • 600 g pizza dough (ready-to-use)
  • 1 shallot
  • 1 clove of garlic
  • 1 tin of cubed tomatoes (400 g)
  • 5 fresh basil leaves
  • 1 tbsp oregano
  • 2 tbsp olive oil
  • Salt and pepper

  • Baking paper
  • Blender or hand blender

Preparation method

  1. Pre-heat the oven to 200 ˚C.
  2. Peel the sweet potatoes and cut them into strips of 5 x 1 cm. Slice the courgette into 1 cm cubes. Halve the sweet pepper, remove the seeds and slice the flesh into thin strips. Slice the mozzarella.
  3. Halve the cayenne pepper, remove the seeds and finely slice the flesh.
  4. For the pizza sauce, finely chop the shallot and garlic and place in the blender or in the bowl of the hand blender. Add 300 grams of tomato cubes, basil leaves, oregano and olive oil and purée to create a smooth sauce. Season with salt and pepper.
  5. Place the pizza dough on a baking tray lined with baking paper. Spoon the pizza sauce over the dough. Then arrange the mozzarella, sweet potato, courgette, red pepper and cayenne pepper over the top. Bake the pizza in the middle of the oven for about 25 minutes until golden brown and cooked.

Tip: Serve the pizza with extra basil leaves.
