Preparation method

  1. Peel the figs. Finely chop the flesh. Squeeze the lime. Add the figs to a saucepan with the lime juice, jam sugar and 1 tablespoon of water. Bring to the boil stirring all the time. Leave to simmer gently for 6 minutes a low heat. Remove from the heat and leave to cool in the fridge.
  2. Heat a dry frying pan and fry the flaked almonds on medium heat in about 3 minutes until golden brown. Cool on a plate.
  3. Beat the cream cheese and the milk with a whisk until soft and airy. Slice away the top of the kumquats but do not cut all the way through. Spoon a teaspoon of cream cheese and some fig jam into the kumquats. Sprinkle with the flaked almonds.
