Cod ceviche with passion fruit

Ingredients
Cod ceviche
- 400 g super fresh cod (sushi quality)
- 3 passion fruits
- 3 limes
- 1 tbsp honey
- ½ tsp. mustard
- 2 tomatoes
- 15 g fresh chives
- Edible flowers (optional)
- ½ cup of Shiso Purple cress (optional)
- Sea salt and pepper
Preparation method
- Thinly slice the cod and layer them in a flat dish allowing them to slightly overlap. Halve the passion fruit and place the pulp in a bowl. Squeeze the limes and add the juice to the passion fruit pulp. Add the honey and mustard. Keep 4 tablespoons of the dressing aside and pour the rest over the cod. Cover and leave to marinate in the refrigerator for at least 1 hour. The acid of the lime will gently cook the cod.
- Quarter the tomatoes and remove the seeds. Cut the flesh into cubes and chop the chives.
- Divide the cod among 4 plates, pour the rest of the dressing on top. Then add the tomatoes, chives and salt and pepper to taste. Garnish with the flowers and cress if desired.
