Frittata with Bimi® and shiitake

A frittata is an Italian version of an omelette. Simply add the vegetables of your choice. Serve a large slice with a salad as a main course or a smaller slice as a starter, snack or lunch.

Ingredients

Frittata with Bimi® and shiitake

  • 1 tbsp olive oil
  • EAT ME Bimi Product photo
    200 g Bimi®
  • 100 g shiitake mushrooms
  • 1 red sweet pepper
  • 1 shallot
  • 6 eggs
  • 40 g grated Parmesan cheese
  • 100 grams Gorgonzola
  • salt and pepper

  • quiche form or shallow cake tin approx. 24 cm ∅

Preparation method

  1. Preheat the oven to 200 °C. Grease the quiche form with olive oil.
  2. Cook the Bimi®in boiling water for 2 minutes. Rinse briefly under cold running water to stop the cooking process. Drain well.
  3. Slice the shiitake mushrooms and slice the sweet pepper into rings. Slice the shallot into half rings. Scatter the vegetables over the base of the greased quiche form.
  4. Beat the eggs in a bowl and add the Parmesan cheese. Season with salt and pepper. Pour the egg mixture over the vegetables. Crumble the gorgonzola over the top.
  5. Bake the frittata in the middle of the oven for about 25 minutes until brown on top.

 

  1. Tip: Garnish with roughly chopped flat parsley.
