Preparation method
- Peel the ginger and slice into thin strips or grate on a fine grater.
- Bring 1 litre of water to the boil in a saucepan and add the grated ginger. Leave to simmer gently for 10 minutes on a low heat. Remove from the heat and leave to stand for 5 minutes. Pour the water through a sieve.
- Squeeze the lime. Add lime juice to taste. Divide the mint over 4 glasses and pour in the ginger tea.
