Pancakes with physalis syrup

  • 100 g flour
  • 200 ml full milk
  • 2 eggs
  • butter or sunflower oil for frying
  • 300 g physalis

    3 limes
  • 1 orange
  • 120 g jam sugar
  • salt

Preparation method

  1. Beat the flour, milk, eggs and a pinch of salt with whisk to create a smooth batter.
  2. Remove the papery husks from the physalis berries. Rinse and halve the berries. Squeeze the lime and orange. Put the berries, the juice, the jam sugar and 100 ml water in a pan. Bring to the boil. Leave to simmer gently on a low heat for about 10 minutes.
  3. Heat some butter or oil in a non-stick-frying pan. Make 8 very thin pancakes.
  4. Serve the pancakes with the physalis syrup.
