Sweet potato burgers

Ingredients
Sweet potato burgers
- 500 g sweet potatoes
- 1 clove of garlic
- 5 g fresh basil
- 5 g fresh coriander
- 3 eggs
- 1 tsp curry powder
- 3 tbsp olive oil
- 5 g fresh mint
- 1 lime
- 5 tbsp full fat quark
- 1 tbps honey
- 4 cridpy wholemeal rolls
- 50 g spinach
- salt and pepper
Preparation method
- Peel the sweet potatoes. Coarsely grate and place in a mixing bowl. Finely slice the garlic, basil and coriander and add to the bowl. Beat the eggs. Add to the bowl . Season the mixture with the curry powder, salt and pepper. Mix well. Shape into four burgers of equal size with damp hands.
- Heat the olive oil in a frying pan. Fry the burgers for about 15 minutes until golden brown and cooked. Turn them halfway.
- Meanwhile, finely chop the mint. Squeeze the lime. Mix the mint with the quark. Season with lime juice, honey, and add salt and pepper to taste.
- Arrange the spinach on one half of each roll. Top with a burger and a spoonful of sauce.
- Tip: Use a serving ring to shape and fry the burgers for a professional finish.
- Variation tip: Replace the spinach with watercress.
