Ingredients
Avocado and tomato sandwich
- 2 tomatoes
- 20 g fresh basil
- 1 avocado
- 8 lettuce leaves
- 6 slices of wholemeal bread
- salt and pepper
Preparation method
- Slice the tomato and finely chop the basil.
- Slice the avocado all the way around the stone. Twist the two halves apart. Remove the stone and scoop the flesh out of the skin. Cut into slices.
- Remove the crusts from the bread. Arrange 2 lettuce leaves and some tomato slices on one slice of bread. Scatter the basil on top. Top with another slice of bread. Place some lettuce and avocado on this slice. Season to taste with salt and pepper and top with the third slice of bread. Repeat the steps above to make another sandwich. Slice the sandwiches across diagonally.
- Tip: Replace the salt with smoked salt for an extra flavour boost. Want to make it even creamier? Spread the bread with mayonnaise.
