- 200 g self-raising flour
- Pinch of salt
- 2 eggs
- 175 ml milk
- Butter for frying
- 1 mango
- 125 g blueberries

Preparation method
- Put the flour in a bowl and add a pinch of salt. Add the eggs one at a time, then add the milk. Beat the batter mix well using a whisk. Allow the batter to rest for 10 minutes,.
- Heat a non-stick frying pan over a high heat. Add some butter to the pan and cook approx. 12 pancakes with a 10 cm diameter.
- Cut the mango into two halves along the stone. Score each half into squares without cutting through the skin. Turn out the halves with your thumb and slice off the cubes. Or use a mango slicer.
- Divide the mango squares and blueberries between the pancakes.
