Avocado toast with egg

A lunchtime favourite for many: avocado toast with egg! Using just a few ingredients, you can conjure up this lunch time recipe in no time, plus you’ve probably already got most of the ingredients at home! Just add a soft boiled egg and serve with pungent rocket leaves.

Ingredients

  • 2 slices of brown bread
  • 2 eggs
  • 25 g rocket
  • salt and pepper

Preparation method

1. Toast the slices of bread and boil the egg for 7-8 minutes.

2. In the meantime, cut the avocados all the way around the stone. Twist the two halves apart. Remove the stone and scoop the flesh out of the skin with a spoon. Slice the flesh into thin strips and spread over the bread. Add the rocket and egg.

3. Season with salt and pepper.
