Ingredients
Braised leek with thyme
- 1 kg leek
- 1 clove of garlic
- 1 shallot
- 2 tbsp olive oil
- 3 sprigs of thyme
- salt and pepper
Preparation method
- Halve de leeks slice across diagonally into chunks. Finely chop the garlic and the shallot.
- Heat the olive oil in a large pan. Fry the shallot and garlic on a medium heat for about 3 minutes until they soften. Add the leek and the sprigs of thyme.
- Turn down the heat. Braise the leek for another 10 minutes with the lid on the pan. Stir occasionally. Season with salt and pepper.
- Tip: Replace the olive with butter for an extra creamy flavour. Or use ghee for a savoury touch.
