Bulgur with sharon fruit and chicken

Fruit in a salad is a winning combination. The fruity flavour of sharon fruit complements the spicy chicken beautifully. A lovely dish to serve at lunch or as main course.

Bulgur with sharon fruit and chicken

  • 250 g bulgur
  • 300 g chicken thigh fillets
  • 2 tbsp olive oil
  • 1 tbsp paprika powder
  • 2 tbsp za’atar
  • 2 sharon fruits
  • 1 red onion
  • 3 tomatoes
  • 3 spring onions
  • 1 clove of garlic
  • 15 g flat leaf parsley
  • 10 g chives
  • 3 tbsp Turkish yoghurt
  • 2 tbsp mayonnaise
  • 1 tsp mustard
  • salt and pepper

Preparation method

  1. Prepare the bulgur according to the instructions on the package.
  2. Cut the chicken into strips. Mix with the olive oil, paprika powder and za’atar. Season with salt and pepper. Leave to marinate for 5 minutes.
  3. Slice the sharon fruit into small cubes. Slice the red onion into rings and the tomato into small cubes. Slice the spring onion into rings.
  4. Finely chop the garlic, parsley and chives. Mix the herbs with the yoghurt, mayonnaise and mustard. Season with salt and pepper.
  5. Heat a large frying pan. Fry the chicken on a medium heat for approx. 5 minutes until golden brown and cooked. Add the bulgur and stir well. Transfer to a bowl. Add the red onion, tomato, sharon fruit and spring onion. Serve with the garlic and herb sauce.
