Filled tomatoes with managetout

Ingredients
Filled tomatoes with managetout
- 100 g mangetout
- 3 small broccoli florets
- 1 corn on the cob
- 3 cocktail tomatoes

Preparation method
- Cook the mangetout and broccoli for approx. 3 minutes until just tender. Drain and rinse under cold running water to stop the cooking process.
- Prepare the corn on the cob in the microwave according to the instructions on the package. Remove the kernels from the cob.
- Slice way the tops of the tomatoes. Carefully remove the seeds with a teaspoon. Arrange six to seven mangetout in each tomato, add some corn kernels and a small broccoli floret.
- Tip: Serve with a dip sauce made of 3 tablespoons of yoghurt, 1 tablespoon of mayonnaise and ½ a teaspoon of mustard. The recipe then is no longer lactose free.
