Ingredients
Green mini asparagus in pouff pastry
- 200 g green mini asparagus
- 5 slices of puff pastry
- 5 slices ham
- 1 egg

Preparation method
- Preheat the oven to 200 °C.
- Cook the asparagus in boiling water for 2 minutes. Rinse them in cold water to stop the cooking process. Pat them dry with kitchen paper.
- Lay the puff pastry sheets on a baking tray lined with baking paper. Leave to defrost for a while. Place a slice of ham on each slice of puff pastry. Divide the asparagus over the ham. Fold the puff pastry into a rectangle. Press the sides with a fork to seal.
- Beat the egg. Brush the top of the pastry with the egg. Bake in the middle of the oven for about 20 minutes until golden brown and cooked.
- Prefer not to use meat? Replace the ham with two slices of plant-based chorizo or with a half slice of mature goat cheese.
