Ingredients
Grilled padron peppers
- 1 clove of garlic
- 500 g padrón peppers
- 4 tbsp olive oil
- 5 g fresh mint
- 5 g fresh coriander
- 2 tbsp mayonnaise
- 4 tbsp yoghurt
- salt and pepper
Kitchen tools
- BBQ
- Foil BBQ tray or grill pan
Preparation method
- Press the garlic above the peppers. Sprinkle with the olive oil. Season with salt and mix well.
- Thinly slice the mint and coriander leaves. Stir the chopped herbs through the mayonnaise and yogurt. Season with salt and pepper.
- Grill the peppers in the foil BBQ tray on the barbecue in approx. 6 minutes just cooked. Alternatively, heat the grill pan and grill for around 8 minutes. Serve with the herb dip.
