Ingredients
Kiwi and surimi crab tartare
- ½ cucumber
- 1 red sweet pepper
- 300 g surimi crab sticks
- 2 tbsp mayonnaise
- 1 lime
- 4 kiwis
- 1 handful of frisée lettuce
- 1 punnet shiso purple cress or Brocco cress
- 1 punnet edible flowers(optional)
- salt and pepper

Preparation method
- Slice the cucumber, sweet peppers and surimi sticks into small cubes. Add to a mixing bowl. Add the mayonnaise. Squeeze the lime. Season the ingredients with lime juice, salt and pepper.
- Peel the kiwis. Halve lengthwise and cut across into the thinnest possible slices.
- Arrange the slices in a flower shape on 4 plates. Place the serving ring on the kiwi . Fill the ring with the surimi mixture. Press slightly. Remove the ring and repeat on the other 3 plates. Garnish with the frisée lettuce, cresses and edible flowers.
