Mashed sweet potatoes

Ingredients
Mashed sweet potatoes
- 750 g sweet potatoes
- 2 tbsp olive oil
- 35 g butter
- 1 tbsp coarse mustard
- 75 g rocket
- salt and pepper

Preparation method
- Peel the sweet potatoes. Cut into evenly sized chunks. Boil in a large pan of water for 15 minutes (make sure the sweet potatoes are covered with water). Drain and briefly return to the heat. Steam dry over a low heat for a minute.
- Add the olive oil and butter. Mash coarsely using the potato masher. Season with the mustard and salt and pepper. Stir the rocket through the mash. Serve immediately.
- Tip: Serve the mash garnished with crumbled feta, walnuts and a slice of lemon.
