Ingredients
Mini carrots
- 400 g mini carrots
- 2 tbsp olive oil
- 60 g hazelnuts
- 15 g fresh leaf parsley
- 200 g feta
- Salt and pepper

- Baking paper
Preparation method
- Preheat the oven to 180 °C.
- Peel the mini carrots, place them on a baking tray lined with baking paper and sprinkle olive oil on them. Season to taste with salt and pepper. Roast the mini carrots in approx. 20 minutes in the middle of the oven.
- Roast the hazelnuts in a small frying pan over medium heat until golden brown. Let them cool on a plate and chop coarsely.
- Finely chop the parsley. Break the feta into small pieces. Cover the mini carrots with the feta, hazelnuts and parsley.
