Preparation method
- Cut the mango into two halves along the stone. Score each half into squares without cutting through the skin. Turn each half inside out to create a ‘hedgehog’. Halve one dragon fruit and cut the other into slices.
- Halve the passion fruit and halve the figs lengthwise. Halve the pomegranate, loosen the seeds and serve in the husk. Arrange the fruit attractively on a large platter.
Tip: Add a touch of over the top luxury with edible flowers.
