Ingredients
Pretty dragon fruit pancakes
- 2 red dragon fruits
- 3 eggs
- 200 ml (almond) milk
- 250 g buckwheat flour
- 2 tsp baking powder
- ½ tsp cinnamon
- coconut oil for frying
- 1 lime
- 1 tbsp honey
- 125 g blueberries
- 250 g strawberries
- icing sugar
- salt
Preparation method
- Halve the dragon fruits and scoop the flesh out of the skin. Purée the flesh in the blender.
- Separate the eggs and beat the egg whites with the mixer until stiff.
- Whisk together the egg yolks and the milk in another bowl. Add the buckwheat flour, baking powder, cinnamon and a pinch of salt. Stir to create a smooth batter. Stir in half of the puréed dragon fruit. Fold the egg whites as lightly as possible through the batter.
- Heat a frying pan on a high heat. Add some coconut oil then spoon a little batter into the pan. Cook pancakes of approx. 12 cm diameter in approx. 4 minutes until firm. Turn the pancakes over after about 3 minutes.
- Squeeze the lime. Add the honey and lime juice to the rest of the puréed fruit to taste. Serve the pancakes with blueberries, strawberries, dragon fruit sauce and icing sugar.
