Smoked salmon with mangetout
- 100 g mangetout
- 1 tbsp olive oil
- 100 g smoked salmon
- 60 g cream cheese
- Lollo rosso leaves to garnish

Preparation method
- Slice the mangetout lengthwise into thin strips. Heat the olive oil in a wok and stir-fry the mangetout on a high heat in 2 minutes until just tender. Allow to cool completely.
- Divide the salmon into 4 equal slices. Arrange a slice of double-folded salmon on each plate. Spoon or pipe a layer of cream cheese onto the salmon and add some of the mangetout. Repeat this step. Garnish with the salad leaves. Season with pepper.
- Variation tip: Smoked trout makes a tasty alternative to salmon.
