Ingredients
Summery kiwi salad
- 3 heads of chicory
- 1 orange
- 2 kiwis
- 75 g black grapes
- 75 g small plum tomatoes
- 150 g mixed salad leaves
- 25 g walnuts
- 150 g soft goat cheese
- 4 tbsp extra virgin olive oil
- 1 tbsp fine mustard
- salt and pepper
Preparation method
- Trim the end of the chicory and roughly slice the chicory.
- Peel the oranges and remove the pith at the same time. Cut between the membranes to segment the orange and collect the juice. Peel the kiwi and cut into wedges.
- Halve the grapes and plum tomatoes. Mix the chicory and the salad leaves in a large bowl. Add the orange and the kiwi. Divide the grapes, plum tomatoes and walnuts over the salad. Crumble the goat cheese on top.
- Whisk the olive oil, orange juice and mustard to create a dressing. Season with salt and pepper. Drizzle the salad with the dressing.
