Avocado and prawn cocktail
Preparation method
- Slice the avocado all the way around the stone. Twist the two halves apart. Remove the stone, scoop the flesh out of the skin and cut into small cubes. Save the 2 half skins to serve the dish in!
- Squeeze the lime. Drizzle the avocado cubes with the juice to prevent discoloration. Gently spoon the whisky sauce through the prawns and avocado. Season to taste with salt and pepper. Spoon the mixture into the avocado skins. Divide the salad leaves over 2 plates and place the filled avocados on top.
- Finely chop the chives and sprinkle over the cocktail to garnish.
- Tip: Serve with toast.
