Baked apples with cranberry compote

Ingredients
Baked apples with cranberry compote
- 1 lime
- 340 g cranberries
- 7 tbsp honey
- 1 tsp cinnamon
- 150 g caster sugar
- 50 ml full red wine
- 4 small apples
- 2 tbsp pistachio nuts
- 40 g oak leaf lettuce
- 150 g smoked duck breast, thinly sliced

Preparation method
- Preheat the oven to 180 °C.
- Squeeze the lime. Bring the cranberries with the lime juice, 3 tablespoons of honey, wine (or water), caster sugar and cinnamon to the boil in a pan. Simmer on a low heat for 5 minutes. Leave the compote to cool to room temperature.
- Halve the apples horizontally. Carefully remove the core using a melon baller, but keep the halves as intact as possible. Place the apple halves on a baking tray lined with baking paper. Brush the cut sides with the rest of the honey. Place the baking tray in the middle of the oven and bake for approx. 20 minutes until the apples are soft and cooked.
- Finely chop the pistachio nuts. Arrange the lettuce over the apples.Drape the slices of duck breast onto the salad, garnish with some cranberry compote and sprinkle with the chopped pistachios. Serve the rest of the compote separately.
- Tip: This baked apple dish tastes amazing with game. Simply leave out the sliced duck breast.
