Ingredients
Frozen fruity yoghurt shards
- 1 kiwi
- 8 kumquats
- ½ mango
- 50 g blueberries
- 1 litre Greek yoghurt 0% fat
- 1 vanilla pod
- 50 g pistachio nuts

- Tray that fits in the freezer
- Plastic film
Preparation method
- Peel and slice the kiwis into cubes.
- Cut the mango into two halves along the stone. Score each half into squares without cutting through the skin. Turn out the halves with your thumb and slice off the cubes. Or use a mango slicer.
- Wash and slice the kumquats. Remove the pips.
- Cut the vanilla pod open lengthwise and scrape out the seeds with the tip of a knife. Stir the seeds through the yoghurt. Line the tray with plastic film. Pour the yogurt on to the tray. Divide the fruit over yoghurt. Scatter with the pistachio nuts. Place the tray in the freezer for at least 3 hours. Break or cut the frozen yoghurt into shards.
