Goat cheese and blueberry salad

  • 200 g soft goat cheese
  • 500 g cooked beetroots
  • 50 g walnuts

    125 g blueberries
  • 100 g rocket
  • 3 tbsp extra virgin olive oil
  • 4 tbsp wood matured balsamic vinegar
  • 1 pack cress
  • pepper

Preparation method

  1. Roughly chop the goat cheese and slice the beetroot into wedges. Roughly chop the walnuts.
  2. Combine the goat cheese, beetroot, blueberries and walnuts with the rocket in a bowl.
  3. Arrange the salad over four plates. Drizzle with the olive oil and balsamic vinegar then sprinkle with the cress and freshly ground pepper.
