Ingredients
Goat cheese and blueberry salad
- 200 g soft goat cheese
- 500 g cooked beetroots
- 50 g walnuts
- 125 g blueberries
- 100 g rocket
- 3 tbsp extra virgin olive oil
- 4 tbsp wood matured balsamic vinegar
- 1 pack cress
- pepper
Preparation method
- Roughly chop the goat cheese and slice the beetroot into wedges. Roughly chop the walnuts.
- Combine the goat cheese, beetroot, blueberries and walnuts with the rocket in a bowl.
- Arrange the salad over four plates. Drizzle with the olive oil and balsamic vinegar then sprinkle with the cress and freshly ground pepper.
