Grilled sweet potato stars with avocado

This not only looks amazing - it tastes amazing too! You can dress it up more by add a little lime mayonnaise. And because kids usually love mayonnaise, they will be happy too!

Preparation method

  1. Slice the potatoes in approx. 6 equal slices of approx. 1 cm. Use a star-shaped cutter to make a star from each slice. Cook the stars in a little boiling water for about 3 minutes until just tender. Drain the stars.
  2. Cut the avocado all the way around the stone. Twist the two halves apart. Remove the stone and scoop the flesh out of the skin. Finely mash the flesh. Press the garlic, add to the avocado and season with salt and pepper.
  3. Heat the grill pan. Brush the stars lightly with olive oil. Grill them in the pan for about 1 minute or until attractive grill marks appear. Turn them halfway.
  4. Slice the cherry tomatoes into wedges and finely chop into the parsley. Arrange the sweet potato stars on a serving dish. Divide the avocado purée and tomato wedges over the stars. Scatter with the parsley.

Tip: Add a dot of lime mayonnaise to bring a hint of fresh contrast. Zest the green peel of an EAT ME lime. Squeeze the juice. Stir 3 tbsp mayonnaise to loosen and add 1 teaspoon of zest and lime juice to taste. You can also sprinkle the rest of the juice over the sweet potato stars before you grill them.
