Ingredients
Jerusalem artichoke fries
- 500 g Jerusalem artichoke
- oil for deep frying
- salt

- Deep fat fryer
Preparation method
- Peel the Jerusalem artichoke. Cut into slices of approx. 1 cm thick, then slice to make batons.
- Cook the batons for 2 mins. in boiling water. Drain and rinse under cold running water to stop the cooking process. Dry them well with a tea towel or kitchen paper.
- Meanwhile, heat the frying pan to 180 °C. Fry the artichoke batons for approx. 3 mins. until crisp and golden brown. Sprinkle with salt.
Tip: Tastes amazing with (homemade) mayonnaise flavoured with lime juice and zest.
