Oatmeal pancakes with blackberries

  • 300 ml of milk
  • 2 eggs
  • 1 tsp vanilla sugar
  • 50 g flour
  • 1 tsp cinnamon
  • 150 g oatmeal
  • 1 tsp baking powder
  • Butter or vegetable oil for frying

    250 g blackberries
  • 4 tbsp maple syrup

Preparation method

  1. Beat the milk, eggs and vanilla sugar in a mixing bowl with a whisk until smooth. Add the flour, cinnamon, oatmeal, 1 pinch of salt and the baking powder and whisk to a firm batter.
  2. Heat a non-stick frying pan on a high heat. Put some butter or oil in the pan and fry about 8 pancakes of 12 cm diameter. Serve them with the blackberries and maple syrup.
