Oatmeal pancakes with blackberries

Ingredients
Pannenkoekjes
- 300 ml of milk
- 2 eggs
- 1 tsp vanilla sugar
- 50 g flour
- 1 tsp cinnamon
- 150 g oatmeal
- 1 tsp baking powder
- Butter or vegetable oil for frying
- 250 g blackberries
- 4 tbsp maple syrup
Preparation method
- Beat the milk, eggs and vanilla sugar in a mixing bowl with a whisk until smooth. Add the flour, cinnamon, oatmeal, 1 pinch of salt and the baking powder and whisk to a firm batter.
- Heat a non-stick frying pan on a high heat. Put some butter or oil in the pan and fry about 8 pancakes of 12 cm diameter. Serve them with the blackberries and maple syrup.
