Ingredients
Papaya salad
- 2 cloves of garlic
- 12 raw, peeled tiger prawns
- 2 tbsp olive oil or sunflower
- 1 lime
- 1 papaya
- 75 g mixed salad leaves
- salt and pepper

- Hand blender
Preparation method
- Press 1 clove of garlic with a garlic press. Combine the prawns with the garlic and olive oil. Season with salt to taste. Heat the wok and stir fry the prawns on a high heat in approx. 3 mins. until pink and cooked. Allow to cool completely.
- Squeeze the lime. Halve the papaya lengthwise and remove the seeds with a spoon. Remove the skin and slice the flesh of one half into strips. Slice the other half into chunks. Place in the beaker of the hand blender with the rest of the garlic and lime juice and blend to create a smooth dressing. Season with salt and pepper.
- Arrange the salad leaves on a plate. Add the prawns and papaya strips. Drizzle with the dressing.
