Ingredients
Puff pastry slice with red fruit
- 1 egg
- 6 puff pastry slices (frozen)
- 400 ml whipping cream
- 2 tbsp caster sugar
- 6 strawberries
- 6 raspberries
- 18 blueberries
- 6 small strings of redcurrants
- 6 blackberries
- icing sugar

- Brush
- Mixer
- Piping bag with serrated nozzle
Preparation method
- Pre-heat the oven to 200 ˚C.
- Beat the egg. Defrost the slices of puff pastry and cut them in half. Place them on a baking tray lined with baking paper. Brush the pastry with the beaten egg. Place the baking tray in the middle of the oven. Bake until the pastry is golden brown for approx. 20 minutes. Cool on a wire rack.
- Whip the cream and the sugar with the mixer until stiff. Scoop the cream into the piping bag.
- Pipe a layer of whipped cream onto 6 pastry slices. Place the rest of the puff pastry slices on top. Pipe on another layer of whipped cream. Decorate the puff pastry slices with the fruits and lightly sprinkle with icing sugar.
- Tip: do you want to make professional looking puff pastry slices? Place the puff pastry on the baking tray, cover with a second sheet of baking paper and place another baking tray on top. Place the tray like this in the oven. The weight of the second baking tray spreads the hot air evenly over the pasty. This ensures a uniform rise, extra crispy puff pastry and straight slices worthy of a professional!
