Ingredients
Rawit pepper salsa
- 2 rawit peppers
- 1 red sweet pepper
- 1 red onion
- 1 clove of garlic
- 6 tomatoes
- 1 tbsp olive oil
- 15 g fresh coriander
- ½ tbsp caster sugar (or honey)
- 1 lime
- salt

- Blender or hand blender
Preparation method
- Halve the rawit peppers and sweet peppers lengthwise. Remove the seeds. Slice the peppers into chunks and place in the blender or beaker of the hand blender.
- Roughly chop the onion, garlic and tomato and add to the chopped peppers with the olive oil, coriander and sugar. Blend to create a coarse salsa. To retain some texture do not over-blend. Squeeze the lime. Season the salsa with the lime juice and some salt. The salsa tastes great with tortilla chips.
- Serving tip: Do you have a few left over tortilla wraps (or pita bread)? Make your own chips. Slice the warps into triangles. Drizzle with some olive oil, sprinkle with smoked paprika powder and salt to taste and bake in a pre-heated oven for approx. 10 mins. until crispy.
