Ingredients
Sweet corn on the cob with Mexican butter
- 2 corn on the cob
- ½ lime
- ½ cayenne pepper
- 3 semi-sun-dried tomatoes
- 3 sprigs of fresh coriander
- 1 clove of garlic
- 1 tsp Tex Mex seasoning
- 150 g butter, at room temperature
- salt
- caster sugar
Kitchen tools
- Cocktail sticks or tapas prickers
- Microwave (optional)
- Blender or hand blender
Preparation method
- Halve the corn cobs and prepare them in the microwave. Or boil the corn for about 10 minutes until soft and cooked. Insert a cocktail stick into each end of the cobs.
- Squeeze the half lime. Remove the seeds from the cayenne pepper. Place the lime juice, cayenne pepper, tomatoes, coriander, garlic and Tex Mex seasoning in the blender or beaker of the hand blender . Blend until smooth.
- Stir the softened butter with a whisk and add the seasoning mixture. Season with salt and sugar.
- Brush the Mexican butter onto the corn on the cob.
