Ingredients
Caribbean corn on the cob with cayenne pepper
- 2 corn on the cob
- 1 cayenne pepper
- 6 sprigs of fresh coriander
- 2 limes
- 3 tbsp honey
- 1 tbsp extra virgin olive oil
- 1 tbsp roasted sesame seeds
Kitchen tools
- Cocktail sticks or tapas prickers
- Microwave (optional)
Preparation method
- Halve the corn cobs and prepare them in the microwave. Or boil the corn for about 10 minutes until soft and cooked. Insert a cocktail stick into each end of the cobs.
- Halve cayenne pepper lengthwise, remove the seeds and finely slice the flesh. Finely chop the coriander. Squeeze the limes.
- Mix the juice with the honey and olive oil. Combine the cayenne pepper, coriander and sesame seeds with the olive oil. Pour the oil over the warm corn cobs.
- Tip: add a knob of butter to the water used to cook the corn cobs, for an extra succulent taste.
- Tip: grill the corn cobs on the BBQ! Even nicer with this spicy dressing.
