Mango salsa

Preparation method
- Slice the mango into two halves along the stone. Score each half into narrow squares without cutting through the skin. Turn out the halves with your thumb and slice off the cubes. Or use a mango slicer.
- Halve cayenne pepper lengthwise, remove the seeds and finely slice the flesh.
- Cut the tomato into 6 mm cubes and remove the seeds. Mix the tomato with the mango and cayenne pepper. Press the garlic. Add to the egg mixture and season with salt and pepper.
- Variation tip: Add some finely chopped fresh flat parsley or coriander for added flavour.
