Ingredients
Passion fruit filled with smoked chicken
- 175 g smoked chicken
- ¼ cucumber
- 3 tomatoes
- 2 tbsp (vegan) yoghurt
- ½ tsp curry powder
- 4 passion fruits
- 8 salad leaves (e.g. frisée)
- salt and pepper
Preparation method
- Slice the smoked chicken and cucumber into 6 mm cubes and put them in a bowl. Cut the tomato in half, remove the seeds and slice the flesh into 6 mm cubes. Add to the bowl.
- Mix the yoghurt with the curry powder and season with salt and pepper. Add to the chicken salad and mix well to combine.
- Halve the passion fruits and scoop out the flesh with a spoon.
- Fill each skin with a salad leaf. Add a generous spoonful of chicken salad. Divide the passion fruit cubes over the top.
- Tip: Replace the curry powder with garam masala or madras for a stronger flavour. Or add a few drops of Tabasco for a spicy touch.
