Ingredients
Sweet potato skewers
- 4 sweet potatoes
- 5 g fresh coriander
- 2 tbsp mayonnaise
- 2 tbsp sweet chilli sauce
- 3 tbsp olive oil
- Salt

- Metal skewers
Preparation method
- Scrub the sweet potatoes clean, slice them into 2 cm slices and then slice into quarters.
- Cook the sweet potato for about 5 minutes. Rinse under cold running water to stop the cooking process. Leave to cool slightly.
- In the meanwhile, finely slice the coriander and mix through the mayonnaise and chilli sauce.
- Thread the sweet potato chunks onto the skewers. Brush with olive oil and sprinkle with salt. Grill the skewers on the barbecue for about 6 minutes. Turn them regularly.
- Serve the sweet potato skewers with the dipping sauce.
Tip: Like things hot and spicy? Replace 1 tablespoon of chilli sauce with ½ a tablespoon of hot sriracha sauce.
